China Dairies 2 (The documentation)

After the initial offer letter, comes the real task. Getting documents having it validated and finally leading to the work permit before one can apply for the VISA. So, once I confirmed my interests in joining the organization, I was given a list of documents I will need to scan and send the authorities via mail. Just for general information, this is a process where the organization procures VISA for the employee (in this case me). After a good number of email exchanges about the clarity of the documents and other small hiccups, the first stage of real documentation was when I needed my degree certificate to be attested through the External Ministry, and some other ministries in Delhi where I had my Degree from. Otherwise a lengthy process, but things move easier with money. China Dairies 1 (Job application)

Like I promised, "My China Dairies", let me start from the beginning. I was still working in an MNC when I saw a job opening in my social media, Facebook to be precise. It was a job of teaching English at a University. It sure sounded fancy to me. So, I clicked the link saw the ads and was pretty impressed. Suddenly, I thought to myself, it was either going to be like one of the jobs you want but never really give it a shot or maybe actually do it. In a split second I decided to do it. I actually filled out the forms although I didn't meet all the requirements. I remember clearly a peer told me once that for a job position one need not fulfill all the requirements sometimes, it's just a way to sift through serious applicants (kind of first level elimination). Going to China, teaching there, in a University sounded like a distant dream for a small town girl like me. I am not the best nor the worst, I am quite average. My friends could easily agree on that. The only difference, maybe, my hopelessly optimistic mind and the courage to take my chances. Why is it important ? I asked myself this question many times before I could actually think of one. By now the realization, simply amazes me, how writing can actually be a sell out of emotions fake and real or both. Curious beings that we are, we have always been drawn to new ideas and information. Most narratives are a part of the greater truth. Can it be dangerous? I believe it can be and very real. The point being, every single one of us color the facts to our opinion. It is the most common example of freedom of expression, abused. Cooking has suddenly become a passion  with me, hygenic food and a healthy lifestyle is one ways to face the recession, it simply means less hospital bills to foot. I have never been fond of following recipes straight out of a cook book. As fancy as the food looks in the pictures, the bulk of the ingredients aren't always available. Sometimes I don't like a particular ingredient to be. So I had to understand food inside out. My journey in the culinary world is self taught (A necessity when you start living alone in a city). After several attempts both successful and not so successful ones I can say I am comfortable now.   To put it simply, it is about understanding the food texture a little and its characteristics and what you get in return is the required taste you want create. Delhi, through my eyes- a jugaad

The first thing that comes to me when I think of Delhi is fun , independence , education and yes my very first job . I owe it all to Delhi. That brings me to an important question ; Why is Delhi so irresistible when it has the highest crime rates ? I think one reason could be that anybody can be a Delhi-ite. What makes it even more attractive is that Delhi do not belong to any one in particular group but has been a home to people from all around the country and sometimes even to expats. When I first came to Delhi , the word, ‘ Jugaad ’ struck me not just a vocab but indeed slowly seeped into my lifestyle. This word in fact impacted me so much that, if I  had to define Delhi in one word; it would be ‘ Jugaad ’. The best approach to live in Delhi itself is to be laid back; once you begin accepting the manifold culture of this place,one can actually realize that it actually liberates us.
